Mac & Cheese!!!

This is my favorite Mac & Cheese recipe, although people also rave about Pioneer Woman's recipe and I haven't tried that one (yet).

This is one is so creamy and tasty!!!

Company Mac & Cheese
From Taste of Home Annual Recipe book 2000

1 7 oz package of elbow macaroni (almost 1 cup of uncooked macaroni)
4 tablespoons butter
3 tablespoons flour
2 cups milk
1 package cream cheese, cubed
2 cups (8oz) shredded cheddar cheese
2 teaspoons spicy brown mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Cook macaroni according to directions on package. Meanwhile, melt 4 tablespoons butter in a large saucepan. Stir in flour until smooth.  Gradually add milk. Bring to a boil; cook and stir for 2 minutes. Reduce heat; add cheese, mustard, salt and pepper. Stir until cheese is melted and sauce is smooth. Drain macaroni; add to the cheese sauce and stir to coat. Transfer to a greased shallow 3 quart baking dish. Cook at 400 degrees uncovered 15-20 minutes or until golden brown.

(the recipe calls for dried bread crumbs mixed with 2 tablespoons butter. I don't usually do that thought, because I have a hard enough time trying to get my kids to eat mac and cheese...I'm really not sure if they're my kids if they don't like mac!!!)

Halloween 2012

It was a fun Halloween. BayLea was a Monarch Butterfly and Breccan was a Star Wars Clone.





Breccan had a field trip to the pumpkin patch on Halloween instead of a party in the classroom. They really had a great time, and man, they were all so well behaved!

Our FAVORITE Fettucini Alfredo

I got this from some Brand Name cookbook a long time ago.

1 8-oz package of cream cheese, cubed
3/4 cup Parmesan cheese
1/2 cup butter/margarine
1/2 cup milk (I use heavy cream when I have it)
8 ounces fettucini, cooked and drained.

In a large sauce pan, combine cream cheese, parmesan cheese, margarine and milk; stir over low heat until smooth. Add fettucini and toss.

Soccer

Both of my kids are so good at soccer...especially since neither have been playing since they were three! Bay is in her 2nd season and Breccan is in his 3rd season. I'm very happy and so proud of how hard they work.









Final Bee Celebration & Bay's Soccer Practice

 Mrs. Pearson always has a bee celebration at the end of her bee unit. They make 'bee bread'--crushed graham crackers and honey mixed up.

 They play a bee game where they roll the dice and draw the correct parts of a bee body.

 They taste 4 types of honey, including honey still in the honeycomb, a little bit of wax and all! Breccan liked all four types of honey. One was just basic store brand honey, one was wildflower honey, and one was buckwheat honey. They all had a different flavor!

 Yum!!!!

 They also made cute little bee headbands. Breccan looked so cute!


 That night was soccer practice. Look at the face on my girl. All the girls...it's so sad the way the Fire Soccer program is run. Some of the teams have played together since they were 3 years old. And some teams, like Bay's team, haven't been together as long, and since they are the new team they get the new girls. Not that that is bad, (Bay was a new girl last year) BUT the problem lies in the games...the teams formed years and years and years ago are VERY good...and the completely crush the Dandelions...CRUSH them! Our girls work SOOOOOOOO hard, and love the game (just look at their faces) but NEVER win and in fact, get beaten so badly. Watching them try so hard, and never win, breaks their hearts, and their parent's hearts. I plan on writing a letter to the league; it is craziness to sit around why your daughter's love of soccer dwindles at each game. Probably nothing will come of it, because the parents of the kids who are on the winning teams are perfectly happy.

Color Sunday on the Mesa

 We went to Powderhorn for Color Sunday and rode the lift up to the top. It was so beautiful and very relaxing. It was a little chilly coming down and a little long...the kids got a bit bored on the way down. But it was so very beautiful and we had a happy day!


 My daughter and her chewed up peanuts!
